Strawberry Cupcakes

Another cupcake post – this time Strawberry and Cream, again from the Primrose Bakery Cupcake Book. These were entirely more successful than the Lemon Meringue cupcakes I tried a couple of weeks ago…

Hidden inside was a big dollop of strawberry jam, which worked much better than the lemon curd did in my last batch of cupcakes – the key seems to be adding it after cooking, rather than before.
